Oat Bran Muffins
1 cup all-purpose flour (I used half white and half fresh-ground wheat - yum!)
1 cup oat bran
3 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1 cup milk
2 large egg whites, beaten (I just used one whole egg)
1/4 cup honey
2 tablespoons melted butter
- Preheat oven to 350°F. Line a 12-cup muffin tin with baking cups. Coat with cooking spray.
- In a mixing bowl, combine flour, oat bran, baking powder, salt and cinnamon. Mix well; add milk, beaten egg whites, honey and melted butter. Stir to just moisten the dry ingredients. Do not over mix.
- Pour batter evenly into baking cups and bake for 15 to 17 minutes. Tops should be golden brown and spring back when lightly touched in the center.
Makes 1 dozen muffins.

Mmm. I love homemade bran muffins. HATE storebought ones, love homemade.
